Left-Over Smoked Chicken Salad

Last night I smoked country style ribs and boneless chicken breasts.  Today we have left-overs, as we always do, so I am going to take the left-over smoked chicken and turn it into chicken salad for sandwiches and our lunch.

In our house, the answer is BOTH.  Yes, I cater to all the taste buds in my home and with six people under one roof, well lets just say, it's easier to make both rather than listen to the bitching.

Diced celery, garlic, and onion, sweet relish, salt, pepper, and some fresh herbs will make this smoked chicken salad the perfect lunch today!
